Abstract: 一、生瓣水烫先将干法或湿法去皮后的豆瓣片装于箩筐约25千克左右,然后在蒸锅上横置一木棒,待水烧到沸腾时,把装入箩筐的豆瓣连筐放入锅内蒸,筐绳系在木棒上.此时要注意不使豆瓣浮起散落在蒸锅底部.豆瓣入水后要用铁铲在筐内不断搅拌,使之受湿均匀,一般浸烫2~3分钟,达到三分熟程度即可迅速取出,用冷水浸泡,使之降温,然后沥去水分,倒入接种拌曲台.……
