Abstract: 以啤酒厂和麦芽厂废弃的大麦芽根提取磷脂酶后的残渣为主要原料,以沪酿3.042米曲霉为菌种,采用低盐固态发酵生产酱油,酱油中的氨基酸态氮为1.14%左右.为开发新的蛋白质资源,综合利用废弃的大麦根,减少环境污染开辟了一条新的途径.
