Abstract: 采用法尔凯耐高温活性酒用干酵母,进行了玉米粉边糖化边浓醪酒精发酵.考察了发酵剂、pH值、营养盐对发酵结果的影响.当调浆料水比为1∶2.11,经过50.5h发酵,成熟醪中酒份达到16.12%,残还原糖0.22 %,残总糖1.26 %,淀粉实际产酒率52.29 %,淀粉利用率92.08 %.
