Abstract: 研究采用正交试验对盐酸水解大豆浓缩蛋白制备氨基酸的条件进行了优选,试图得到高含量的氨基酸溶液.结果表明,当盐酸浓度为6mol/l、水解时间为14h、液固比为4:1时可以得到最佳的水解效果,此条件下的氨基氮含量为55.74%.
