Abstract: 筛选的芽孢杆菌R21-4对某些革兰氏阳性、革兰氏阴性细菌及真菌均有抑制作用,具有较广的抑菌谱,特别是对食品中的常见腐败菌,如蜡样芽孢杆菌、大肠杆菌、产气英膜杆菌、产气肠杆菌、荧光假单胞菌等均有明显抗菌效果.在对其进行生理生化以及16Sr RNA基因序列测定和聚类分析软件的分析后,鉴定菌株R21-4为枯草芽孢杆菌Bacillus subtilis sp.R21-4,并采用琼脂块法和生长曲线法对其抗菌机理进行了研究.
