Abstract: 利用从泡菜中分离的乳酸菌,通过初筛和复筛,获得1株高产塔格糖的乳酸菌SK1.002.尝试利用乳酸菌生物转化半乳糖为塔格糖,在含1%半乳糖发酵液中发酵培养12 h,塔格糖含量达4.50 mg/mL,表明利用乳酸菌可以生物转化生产塔格糖,为塔格糖生物转化提供食品级微生物作了初步探索.
