Abstract: 以酵母高级醇和乳酸代谢理论为基础,建立了一套低含量高级醇和高活性的乳酸脱氢酶啤酒酵母菌株选育方法.将出发菌株诱变后,依次通过乳酸、麦芽汁-碳酸钙和TTC上层平板筛选,分离获得一株高级醇产量下降28.7%的目标菌株.用该菌株接种发酵后,啤酒中高级醇含量由原出发菌株的98.4 mg·L-1下降到70.2 mg·L-1,其发酵性能基本保持不变;经连续8次继代培养后,该菌株的高级醇、双乙酰产量和啤酒发酵度保持不变,显示遗传性能稳定.
