Abstract: HACCP是能显著提高食品安全的一种有效预防控制系统.为保证禽蛋产品质量安全,将HACCP应用于禽蛋生产.文章分析了禽蛋生产过程中每个环节可能造成的潜在危害,以确定影响产品质量的关键控制点(CCPs),并针对每一个CCP制定出相应的监控措施,将生产过程可能存在的潜在危害因素降低到最低程度,预防不安全因素造成对禽蛋的危害,保证产品的安全性.
