Abstract: 2004年度全区冬小麦区域试验和部分春小麦区域试验拉萨点参试品种品质形状测试结果表明:参试品种各品质形状的平均水平为蛋白质含量15.84%,湿面筋33.91%,沉淀值34.61毫升,降落值239.45(s),面粉吸水率67.48%,,面团形成时间3.31分钟,面团稳定时间2.47分钟,软化度67.48%,粉质评价值49.64.从测试结果看出面筋质量差,穗发芽严重是当前我区小麦品种品质的主要问题.
